3 large lemons, preferably organic
3/4 cup fresh squeezed lemon juice
2/3 cup coarse salt
2 cinnamon sticks (2 inches)
2 teaspoons coriander seeds
3 bay leaves
Slice off both ends of the lemon and stand the lemon upright. Slice downward from the top of each lemon as if you were going to make 8 slices. Do not, however, cut all the way through the bottom. Spread each lemon out like a flower and sprinkle one third of the salt into each one. Add the lemons to a freezer bag filled with the bay leaves, cinnamon, coriander, and lemon juice. Seal the bag and freeze it for 2 days.
After 2 days, remove the bag from the freezer and thaw it out at room temperature. When thawed, put the bag back into the freezer for storage. To serve, remove one of the frozen lemon wedges, rinse the excess salt off of it, and chop as desired.
