1/4 teaspoon whole cumin seeds
1 tablespoon butter
3 large carrots, peeled and chopped
1/4 cup orange juice
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lime, zested and juiced
1/4 cup water
Toast the cumin seeds in a covered medium pan on low heat. After the seeds have started to pop, add the butter and melt until it becomes foamy.
Add the carrots, orange juice, ground cumin, salt, pepper, and water, and simmer for about 10 minutes while covered.
Add the lime zest and continue simmering for about 5 minutes, until the carrots are soft.
Cool and sprinkle lime juice over the carrots just before serving.
