1 tube refrigerated pizza dough
1/2 cup artichoke hearts, chopped
1/3 cup frozen spinach
1/4 cup fat free ricotta cheese
1/4 cup fat free shredded mozzarella cheese
Cook the frozen spinach in microwave. Squeeze out all the water.
Combine the spinach with the artichokes and mix.
Preheat oven to 400°F.
Lightly flour a baking sheet. Roll out pizza dough on baking sheet and cut into 4 equal rectangles. For each rectangle, spread on a thin, even layer of ricotta and then a layer of mozzarella cheese.
Next, spread the spinach and artichoke mix evenly on each rectangle.
For each rectangle, roll at an angle. The middle of the roll will be wider than either end of the roll.
Place the rolls on the baking sheet and place in oven for 12-14 minutes.
