8 plum tomatoes
1/3 cup chopped fresh basil
1/4 cup shredded Parmesan cheese
2 cloves garlic
1 tablespoon balsamic vinegar
1 teaspoon olive oil, plus additional oil for bread
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 loaf French bread
Preheat the oven 350°F.
Wash the tomatoes, and cut each tomato in half. Use a spoon to remove the seeds and dice the tomatoes and add to a mixing bowl.
Mince the garlic and chop the basil.
Add the basil, Parmesan cheese, balsamic vinegar, and olive oil to the bowl, and toss to mix well.
Add the black pepper and salt, and stir to combine the mixture.
Slice the French bread into 1/2 inch-thick slices. Arrange the slices on a baking sheet, and brush additional olive oil onto the slices.
Place the baking sheet into the oven, and toast until the slices are slightly browned.
Serve the bread with the bowl of tomatoes.
