1/4 cup flaked coconut
6 slices whole grain bread
3/4 cup cottage cheese
1/2 cup finely diced fresh pineapple
1/2 cup chopped roasted macadamia nuts
1/2 cup finely chopped ham
2 tablespoons finely chopped green onions
Add the flaked coconut to a small frying pan. Toast the coconut over medium to low heat while stirring. Remove from heat when golden brown.
Toast six slices of whole grain bread and slice them diagonally to form a total of 24 triangles. Each slice of bread should be cut into four triangles.
Spoon a dollop of cottage cheese onto each triangle and then add pineapple, macadamia nuts, ham, and green onions to the top.
Sprinkle the toast with coconut and serve.
