1 8-inch whole wheat pizza crust
1 egg
½ cup mushrooms
½ cup whole-leaf baby spinach
2 tablespoons crumbled goat cheese
2 tablespoons olive oil
Salt and black pepper to taste
Sprinkle the mushrooms, spinach, and goat cheese onto the pizza crust. Drizzle the oil on top of this and crack the egg into the middle of the pizza.
Bake the pizza according to the pizza crust directions, or until the egg is fully cooked. Cut the pizza into quarters, letting the yolk break. Add salt and pepper to taste.
