1 cup asparagus, diced
1 cup Roma tomatoes, diced
1 cup red bell pepper, diced
1 tablespoon garlic, minced
1 loaf French bread, halved, cut into 4-inch sections (four slices of bread total)
1 cup pizza sauce
1 cup reduced-fat shredded mozzarella cheese
Preheat the oven to 400°F. Coat a baking sheet with cooking spray.
Combine the asparagus, tomatoes, pepper, and garlic in a small bowl, tossing to coat the fruit and vegetables with garlic.
Place the slides of bread onto the baking sheet, and top each slice of bread with equal portions of the pizza sauce, vegetable mixture, and mozzarella cheese.
Place baking sheet in over and bake for 8-10 minutes until the cheese becomes lightly browned and the vegetables are tender. Serve immediately.
