3 cucumbers, peeled, halved lengthwise, seeded and thinly sliced; (about 4 cups)
1 pint (2 cups) blueberries, rinsed
Salt and pepper to taste
½ cup white balsamic vinaigrette
3 tablespoons mint leaves, thinly sliced
1 cup crumbled feta cheese
Peel and halve the cucumbers lengthwise. Seed the cucumbers and slice thinly. Place the cucumbers into a large bowl and add the blueberries, salt, and pepper.
Add the mint, feta cheese, and white balsamic vinaigrette to the bowl. Gently toss the salad to combine the ingredients.
