1 tablespoon olive oil
2 onions, chopped
4 cloves garlic, minced
1 tablespoon chili powder
6 cups vegetable broth
2 (15 ounce) cans hominy
4 tomatoes, diced
1 (4 ounce) can diced green chilies
5 stalks fresh cilantro, chopped
Lime juice, to taste
In a large stock pot over medium heat, sauté the onion in olive oil until translucent and softened. Add the garlic and sauté for 3-5 minutes then stir in the chili powder and broth and bring to a boil. Reduce heat and add the hominy, tomatoes, and chilies. Simmer 20 minutes.
Garnish with fresh cilantro and a squirt of lime juice before serving.
