3/4 cup packed brown sugar
1/2 cup honey
1/4 cup butter
1/4 cup dark molasses
2 teaspoons instant coffee granules
1 large egg
3/4 cup finely ground almonds
1/2 cup chopped candied orange zest
3 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1/8 teaspoon salt
Glaze
3/4 cup powdered sugar
2 teaspoons lemon juice
1 1/2 teaspoons water
Cookies
Combine the brown sugar, molasses, butter, and honey in a sauce pan. Cook over medium heat for about 3 minutes or until the sugar completely dissolves. Stir constantly and do not boil the mixture.
Pour the sugar mixture into a large mixing bowl. Whisk in the coffee and egg. Stir in the almonds and orange peel.
Pour the flour into a separate mixing bowl. Add the cinnamon, baking soda, cardamom, cloves, ginger, and salt to the flour and stir to combine.
Add the flour mixture into the sugar mixture and stir to form a stiff dough. Move the dough onto a flour dusted surface. Knead the dough for 1 minute or until evenly combined. Wrap the dough in plastic wrap and refrigerate for 24 hours.
Preheat an oven to 325°F. Cover 2 large baking pans with parchment paper and set aside.
Remove the dough from the refrigerator and divide it into 4 equal pieces.
Using 1 piece of dough at a time, form an 8 by 6 inch rectangle and cut into 16 pieces measuring 3x1 inches each.
Place the cut pieces onto the baking sheet leaving 1 inch between them. Bake for 20 minutes or until firm. Move the cookies to a cooking rack.
Glaze
Combine the powdered sugar, lemon juice, and water in a bowl and stir until the mixture is smooth.
When the cookies are warm, drizzle the glaze over the cookies with a spoon.
