1 pound potatoes, peeled and quartered
1 1/4 cups white flour
Sea salt, to taste
Boil the potatoes with a good amount of sea salt for 15-20 minutes or until tender. Strain the potatoes when cooked and mash until smooth.
In a large bowl, sprinkle flour with one had on top of the mashed potatoes while kneading it with the other hand; continue this until the dough is smooth and no longer sticky.
Divide the dough into 3 pieces and roll each into lengths that are 1-2 inches thick. Using a knife, slice off pieces that are a little less than an inch long; repeat until you have used all the dough.
Place all the cut dough pieces into heavily salted, boiling water and cook for about 3 minutes, or until they start rising to the top of the water. Strain the gnocchi and add to sauce of choice.
