3 cups pitted and chopped cherries
2 thinly sliced green onions
2 tablespoons chopped fresh mint
1 tablespoon minced jalapeño pepper
2 teaspoons lime juice
1/2 teaspoon salt
2 pounds bone-in lamb loin chops
1/2 teaspoon lime zest
For the cherry salsa, mix the cherries, jalapeño, green onions, lime juice, mint, and 1/4 teaspoon salt in a bowl. Set aside.
Rub 1/4 teaspoon salt and the lime zest onto the lamb chops.
Grill the lamb chops over medium heat for 5-6 minutes per side (cook longer if medium or well-done meat is desired).
