1 cup black beans, rinsed
1 plum tomato, diced
1 cup fresh corn kernels
2 tablespoons cornmeal
1 pound premade whole wheat pizza dough
1/3 cup barbecue sauce
1 cup shredded mozzarella cheese
Preheat a grill to medium heat
Sprinkle the cornmeal onto a large baking sheet. Roll out the pizza dough on top of the cornmeal, making sure to coat the entire underside of the dough.
Place on the grill and cook for 4-5 minutes or until the crust is puffed and lightly browned. Using a spatula, flip the crust halfway through cooking.
Remove from the grill and spread barbecue sauce evenly over the crust.
Combine the tomato, beans, and corn into a medium bowl. Sprinkle this mixture on top of the barbecue sauce, then top with the cheese.
Return to the grill and cook until the cheese is melted and the bottom of the crust is brown, about 4-5 minutes.
