2 boneless, skinless chicken breasts, each 4 ounces
1 tablespoon olive oil
1/2 cup white onion, chopped
1 cup mushrooms, sliced
1 cup white beans, cooked
2 tablespoons garlic, chopped
1/4 cup fresh basil, chopped
12 ounces uncooked rotelle pasta
1/4 cup Parmesan cheese
Ground black pepper, to taste
Heat a gas grill or broiler. Coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4-6 inches from the heat source.
Cook the chicken 5 minutes on each side until brown and transfer to a cutting board. When cool, slice into strips.
Heat the oil in a nonstick frying pan over medium heat. Sauté the onions and mushrooms 5 minutes until tender. Add the white beans, garlic, basil, and grilled chicken strips. Keep warm.
Fill a large pot 3/4 full with water and boil. Add the pasta and cook 10-12 minutes, then drain thoroughly. Add the chicken mixture to the pasta and toss.
Divide the pasta among plates and garnish with Parmesan cheese and black pepper. Serve immediately.
