1 red onion, sliced
1 red bell pepper, sliced
1 eggplant, sliced
2 tablespoons olive oil
1/4 cup fresh parsley, chopped

1 (8-ounce) container plain hummus
4 whole-grain flatbreads
Preheat a grill or grill.
