2 tablespoons olive oil
1 small onion, minced
1/4 cup tart apple, chopped
2 teaspoons curry powder
Dash of cayenne pepper
4 cups cooked brown rice
2 cups canned chickpeas, drained
1 tablespoon fresh lemon juice
Freshly ground pepper, to taste
Using a heavy skillet, heat the oil over medium heat. Add the onion to the skillet, and sauté until soft (about 3 minutes). Add the apple to the skillet, and cook for 3 minutes, stirring occasionally. Sprinkle the curry and cayenne pepper over the pieces of apple and onion, stirring to coat well. Add the cooked rice and chickpeas to the skillet, and continue cooking until the rice and beans become warm.
Just before serving, sprinkle with lemon juice and pepper, to taste.
