15 ounces canned cannellini beans, drained and rinsed
2 red bell peppers, chopped
2 eggs
1 tablespoon fresh ginger, peeled and grated
1 onion, grated
4 garlic cloves, minced or pressed
1/2 cup fresh parsley, chopped
3/4 cup whole wheat bread crumbs
3 teaspoons oregano, dried
1/2 teaspoon black pepper
Preheat an oven to 350ºF.
Blend the beans and bell peppers until a chunky liquid forms.
In a medium bowl, mix the eggs, ginger, onion, garlic, parsley, breadcrumbs, oregano, pepper, and the blended bean and pepper mixture.
Place roughly two tablespoons of the mixture into hand and roll into a round ball; repeat and place all balls on to greased baking sheets.
Bake the bean balls for 15-20 minutes or until they are firm golden brown balls.
