3 heads fresh broccoli, cut into florets
1/2 cup olive oil
3 cloves garlic, minced
1 1/2 pounds cavatelli pasta
1 teaspoon salt
1 teaspoon crushed red pepper flakes
2 tablespoons grated Parmesan cheese
Boil a large pot of water and then blanch the broccoli for 5 minutes. Drain the broccoli and place it aside.
Boil a large pot of salted water for the cavatelli.
Meanwhile, put the olive oil in a large skillet and heat it over medium heat. Add the garlic and sauté it until lightly golden. Add the broccoli to the skillet and cook for 10 minutes, stirring occasionally.
Place the cavatelli in the boiling salt water and cook for 8-10 minutes. Drain the cavatelli and put it in a large bowl.
Combine the broccoli and cavatelli in the bowl, and toss to mix. Season the dish with Parmesan cheese, salt, and hot pepper flakes, to taste.
