1 cup (uncooked) whole-wheat rotini pasta
1 medium tomato, chopped
1 cup watercress, chopped
2 green onions, sliced
2 teaspoons olive oil
1 chicken breast (about 10 ounces)
1 ounce goat cheese
3 tablespoons roasted pine nuts
Red pepper flakes to taste
Salt to taste
Black pepper to taste
Follow the package instructions to cook the pasta. Drain and set aside.
Cut the chicken into thin pieces.
Coat a pan with cooking spray and heat on medium-high. Once heated, add the chicken. Add the crushed red pepper, salt, and black pepper. Cook the chicken until it starts to brown. Remove the chicken from the pan and set it aside.
Add the olive oil and green onion to the pan. Cook until softened. Lower the heat to medium and add the tomatoes, cooked chicken, and pasta.
Once mixed together and warmed, remove the pasta mixture from the heat. Mix in the watercress and goat cheese. Top with the roasted pine nuts.
