2 cups whole wheat flour
2 whole bulbs garlic
1 1/2 cups lager or pilsner beer
1 cup all purpose flour
2 tablespoons sugar
2 tablespoons extra-virgin olive oil
1 tablespoon chopped rosemary
1 tablespoon baking powder
3/4 teaspoon salt
Cooking spray
Preheat the oven to 375°F. Slice off the tops of the garlic bulbs and remove the outside layers of each bulb. Wrap the garlic in aluminum foil, and bake it until the garlic is very soft (about 45 minutes). Let the garlic completely cool.
Spray a 9 x 5-inch bread pan with cooking spray. In a large bowl. Squeeze the soft garlic pulp out of each clove and mix it with the sugar, baking powder, flours, rosemary, olive oil, and salt. Pour the beer into this mixture, and mix it in until it is combined. Do not over mix.
Bake the dough until the top is golden brown and an inserted toothpick comes out clean (50-55 minutes). Allow the bread to cool fully before removing it from the pan or slicing it.
