2 pounds boneless, skinless chicken breasts
1 package Italian dressing mix
1/2 cup water
1 8-ounce package low fat cream cheese
1 can 98% fat free cream of chicken soup
3 cups cooked white, long grain rice
Place the chicken breasts in a slow cooker. Add the Italian dressing mix and water, cover, and cook on high for 4 hours.
In a separate bowl, combine the cream cheese and soup.
Add the cream cheese and soup mixture to the slow cooker and stir gently to shred the chicken.
Cook on low until heated thoroughly.
Serve over rice.
