Salad
1 cup brown rice, cooked (1/2 c dry)
1 head romaine lettuce, chopped and dried
8 ounces imitation crab meat, chopped
1 English (seedless) cucumber, thinly sliced
1 ripe avocado, diced
1 carrot, grated
3 tablespoons pickled ginger, chopped
Dressing:
3 tablespoons rice wine vinegar
1 tablespoon light soy sauce
Wasabi powder to taste
Garnishes:
1 tablespoon sesame seeds
1 large sheet nori (seaweed), toasted and broken into small pieces
Combine and whisk the dressing ingredients together in a small bowl. Set aside.
Divide the lettuce into four dinner bowls. Add the rice on top of the lettuce.
Add the crab meat, avocado, cucumber, carrot and ginger to each bowl on top of the lettuce and rice.
Add the dressing on top of each bowl and then top with sesame seeds and nori.
