1 cup edamame, shelled
2 cups chopped boiled shrimp
1 can cannelloni beans, rinsed and drained
1 cup cherry tomatoes, halved
1-2 tablespoons red onion, chopped
1/2 cup fresh cilantro, chopped
1/3 cup fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
In a large bowl, mix the edamame, shrimp, beans, tomatoes, and onions.
To make the salad dressing, in a separate bowl, combine the olive oil, lime juice, and cilantro until smooth.
Pour the dressing over the edamame mixture and gently toss.
Cover the bowl and place in the refrigerator to chill.
