2 bunches kale, stems removed
1 small onion, chopped
1 pound crimini mushrooms, cleaned and sliced
1 tablespoon extra virgin olive oil
½ cup fat free half and half
¼ cup cashews, chopped
Salt, garlic powder, cumin, turmeric, and ground ginger, to taste
Steam the kale until it is bright green and tender.
Sauté the mushrooms and onions in the extra virgin olive oil, along with any desired seasoning.
When the mushrooms are cooked, add in the half and half.
When the kale is finished steaming, let it slightly cool, and chop it into pieces.
Combine the kale with the sautéed mixture. Sprinkle the cashews on top. Serve over meat or pasta.
