Nonstick vegetable oil spray
2 12-ounce boxes frozen spinach
1 cup cooked brown rice
2 tablespoons olive oil
1 cup liquid egg white substitute
¾ cup shredded fat-free mozzarella cheese
1 cup fat-free milk
½ medium onion, chopped
½ tablespoon low-sodium Worcestershire sauce
¼ teaspoon dried marjoram
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
Preheat an oven to 350°F.
Thaw the spinach and place in a colander, pressing on the spinach to remove the excess water.
Place the spinach in a large mixing bowl and add all the remaining ingredients and mix until well combined.
Transfer the mixture to a 2-quart baking dish sprayed with vegetable oil spray. Place in the oven and bake for 30 minutes.
Remove from oven, cool slightly, cut into eight squares and serve.
