2 cups water
1 package (8-serving size) sugar-free cherry-flavored gelatin
½ teaspoon cinnamon
1 twenty-ounce can pineapple chunks in juice, not drained
8 large ice cubes
1 eleven-ounce can mandarin oranges in juice, drained
In a small sauce pan, bring the water to a boil. Pour the boiling water into a large bowl.
Add the gelatin and cinnamon to the water and stir until the gelatin is completely dissolved.
Drain the pineapple chunks and save the juice. Add enough ice cubes to the pineapple juice to measure 1½ cups.
Add the gelatin mixture to the pineapple juice and stir until the ice is completely melted.
Refrigerate the gelatin mixture until it is slightly thickened (about 45 minutes).
Place aside ¼ cup each of the pineapple chunks and mandarin oranges. Add the remaining fruit to the gelatin and pour into 1½-quart serving bowl.
Refrigerate until firm (about 4 hours).
Use the saved pineapple chunks and mandarin oranges for garnishing the chilled gelatin.
