1 cup quinoa, cooked
1 can black beans, drained and rinsed
1 cup mango, diced
1 red bell pepper, chopped
2 green onions, sliced
1/4 cup fresh cilantro, chopped
1/4 cup extra virgin olive oil
1 lime, juiced and zested
Salt to taste
Black pepper to taste
In a large bowl, mix the quinoa, black beans, mango, bell pepper, green onions, and cilantro.
In a small bowl, mix the olive oil, lime juice, and lime zest. Pour this mixture into the large bowl.
