8 small papayas, seeded and diced
1/2 cup sugar
1/2 cup water
1/4 cup low-fat coconut milk, divided
2 tablespoons lime juice, divided
1 teaspoon lime zest, divided
Salt to taste
Line a large baking sheet with wax paper. Arrange the diced papaya on the sheet and freeze overnight, about 12 hours.
Combine the water and sugar in a small saucepan and bring to a boil over high heat until the sugar is completely dissolved, about 5 minutes. Pour into a glass measuring cup and let cool for 15 minutes.
Meanwhile, remove the papaya from the freezer. Transfer half of the papaya to a food processor. Add 1/2 of the sugar-water syrup, 2 tablespoons of the coconut milk, 1 tablespoon lime juice, 1/2 teaspoon lime zest, and a pinch of salt. Pulse two or three times until smooth. Transfer to a serving bowl.
Repeat with the remaining ingredients.
Serve immediately in small glasses or freeze until ready to use.
