Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1/4 cup fresh lemon juice

  • 1/2 cup fresh cilantro, chopped

Directions

  • Rinse the quinoa in a fine strainer and drain.

  • Add the water and quinoa to a saucepan and bring to a boil.

  • Turn heat to low, cover, and cook for 15 minutes.

  • Turn off heat and let stand for 5 minutes. Fluff with fork.
