Ingredients

  • 1 1/2 cups water

  • 1/2 cup dried lentils

  • Cooking spray

  • 1 cup onion, chopped

  • 1/4 cup carrot, grated

  • 2 teaspoons garlic, minced

  • 2 tablespoons tomato paste

  • 1 1/2 teaspoons ground cumin

  • 3/4 teaspoon dried oregano

  • 1/2 teaspoon chili powder

  • 3/4 teaspoon salt, divided

  • 3/4 cup cooked pearl barley

  • 1/2 cup panko bread crumbs

  • 1/4 cup fresh parsley, finely chopped

  • 1/2 teaspoon coarsely ground black pepper

  • 2 large egg whites

  • 1 large egg

  • 3 tablespoons canola oil, divided

  • 1 cup spicy fruit salsa, see additional recipe

Directions

  • Into a medium saucepan, add the water and lentils, and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat and simmer until the lentils are soft, approximately 25 minutes. Remove the lentils from the heat, drain, and put half of the cooked lentils in a bowl. Process the other half of the lentils in a blender or food processor until smooth. Mix the processed lentils with whole lentils in a bowl.

  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Sauté the onion and carrots for 6 minutes or until tender, occasionally stirring the vegetables. Add the garlic to the skillet and stir for 1 minute. Add the tomato paste, cumin, oregano, chili powder, and 1/4 teaspoon of salt, and cook for 1 minute while constantly stirring. Remove the vegetable mixture from the heat and mix with the lentils. Add the remaining salt, barley, panko, parsley, black pepper, egg whites, and whole egg. Mix all the ingredients and then cover. Refrigerate the mixture until firm, approximately 1 hour.

  • Use the mixture to shape eight 1/2-inch-thick patties. In a large nonstick skillet, heat 1 1/2 tablespoons of canola oil over medium-high heat. Cook the patties until browned, approximately 3 minutes per side.

  • Serve the patties topped with spicy fruit salsa.
