1 cup cooked fava beans
1 cup cooked chickpeas
3 cloves garlic
1/2 medium onion, chopped (about 1/2 cup)
1 handful fresh parsley, chopped (optional)
1 lemon, juiced and zested
1 teaspoon baking powder
2 tablespoons ground cumin
1 tablespoon ground coriander
1 teaspoon black pepper
1/4 teaspoon salt
1/4 cup whole wheat flour
2 tablespoons olive oil
Preheat an oven to 425 degrees Fahrenheit.
Pulse the beans in a food processor until they are crushed but not squishy.
Add the remaining ingredients except for the olive oil, and pulse until evenly mixed.
Pour the mixture into a bowl. It should stick together so add more flour if necessary.
Pour the olive oil on a baking sheet and add the mixture. Make ball shapes slightly less than 2 inches in diameter.
Bake the balls for 20 minutes then flip and continue for another 15 minutes or until brown and crispy.
Serving suggestion: lemon-tahini dressing.
