1 ½ lb ground beef
1 bay leaf
1 medium onion, chopped
4 teaspoons allspice
1 garlic clove, chopped
1 tablespoon curry powder
6 slices fresh ginger
1 teaspoon cinnamon
1 sweet potato, cubed
1 tablespoon sugar
2 tablespoons tomato paste
In a medium pot, brown the ground beef.
Add the chopped onion and cook until softened.
Add the bay leaf, allspice, clove, curry powder, ginger, cinnamon, and sugar. Reduce heat and simmer for 10 minutes.
Add the sweet potato and tomato paste. Stir occasionally and simmer until the potatoes are tender and the sauce is thickened.
Serve with rice or pita bread (nutritional information not included).
Note: ½ lb of organ meat may be substituted for ½ lb of ground beef for added nutrition.
