2 tablespoons olive oil
4 eggs, beaten
1 (15 ounce) can black beans, drained and rinsed
1 avocado, peeled and sliced
1/4 cup salsa
Salt and black pepper to taste
Heat the oil in a pan at medium heat.
Cook and scramble the eggs until they are set, about 3-5 minutes.
Heat the black beans in a microwave on high until warm, about 1 minute.
Put half of the black beans in each of two bowls.
Place half of the scrambled eggs in each bowl, then top with avocado, and salsa.
Add salt and black pepper to taste.
