1 cup cooked quinoa
3 cups cooked black beans
2 large sweet potatoes, shredded
1 cup shredded low fat cheddar cheese
1 tablespoon ground cumin
Pinches of salt and black pepper
2 eggs
1 cup salsa
2 tablespoons fresh cilantro, chopped
Begin by heating an oven to 350°F. Prep a 9"x9" casserole dish by spraying it with cooking spray.
Combine the quinoa, beans, sweet potatoes, cheddar cheese, and spices in a large bowl. In a smaller bowl, whisk the eggs and salsa. Spread the eggs over the vegetables and pour the mixture into the casserole dish.
Scatter the leftover cheese over the top of the casserole and bake uncovered for 30 minutes. As the casserole is cooling, garnish it with cilantro.
