One 7-ounce can tuna, drained
1 cup dry couscous
1/2 cup frozen corn, thawed and drained
2 tablespoons cilantro, minced
2 tablespoons red wine vinegar
1 tablespoon olive oil
Black pepper, to taste
Pour 2 cups of boiling water over the couscous and let stand for 5minutes until the water is absorbed.
Combine the drained tuna with the couscous. Add the corn, cilantro, red wine vinegar, and olive oil to mixture. Grind in fresh pepper, and serve at room temperature.
