4 boneless, skinless chicken breasts
8 plum tomatoes, sliced 1/2 inch thick
2 cups frozen asparagus pieces
1/2 cup basilpesto
1/4 cup light mayonnaise
Preheat a grill. Place one chicken breast in the center of 4 separate sheets of heavy duty aluminum foil.
Evenly divide the tomatoes and asparagus into 4 servings and place over each chicken breast.
In a small mixing bowl, combine the basil pesto with the mayonnaise. Pour equal amounts of the pesto mixture of each chicken breast. Seal the chicken by folding foil over and sealing the edges.
Place the chicken packets on the grill for 20-25 minutes or until the chicken is fully cooked with no pink in the center.
Alternatively, chicken packets may be baked at 450°F for 23-30 minutes or until fully cooked.
