Ingredients

  • 1 cup quinoa

  • 1 large seeded and diced tomato

  • 2 ears corn, kernels removed

  • 1 peeled, seeded, and diced cucumber

  • 1 peeled, cored, and diced mango

  • 3 tablespoons finely chopped chives

  • 2 tablespoons lemon juice

  • 1/4 teaspoon grated lemon zest

Directions

  • Thoroughly rinse the quinoa, drain, and add to a pot with 2 cups of water. Bring to a boil, reduce the heat to medium, and cover. Simmer for 15-20 minutes or until all the water is absorbed. Set aside for 5 minutes.

  • Fluff the quinoa with a fork, combine with the remaining ingredients, and toss.
