1 cup quinoa
1 large seeded and diced tomato
2 ears corn, kernels removed
1 peeled, seeded, and diced cucumber
1 peeled, cored, and diced mango
3 tablespoons finely chopped chives
2 tablespoons lemon juice
1/4 teaspoon grated lemon zest
Thoroughly rinse the quinoa, drain, and add to a pot with 2 cups of water. Bring to a boil, reduce the heat to medium, and cover. Simmer for 15-20 minutes or until all the water is absorbed. Set aside for 5 minutes.
Fluff the quinoa with a fork, combine with the remaining ingredients, and toss.
