1 cup low-fat (1%) milk
1/3 cup sugar
2 tablespoons vegetable oil
1/2 cup carrots, grated
1/2 cup raisins
1/2 cup walnuts, toasted
1 teaspoon vanilla
1 1/2 cups flour
1 cup old-fashioned oatmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Heat the oven to 400°F. With nonstick cooking spray, coat a muffin tin.
In one bowl, mix the wet ingredients (egg, milk, sugar, oil, carrots, raisins, walnuts, and vanilla) together. In a separate bowl, mix the dry ingredients (flour, oatmeal, cinnamon, baking powder, baking soda, and salt) together. Add the wet ingredients to the dry ingredients and stir gently until the flour is moistened. Do not overmix.
Fill each muffin cup in the muffin tin to about 3/4 full. Bake for 15 minutes or until the edges start to turn brown. Let cool before removing each muffin from the muffin tin.
