1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon dried thyme or 3/4 teaspoon chopped fresh thyme
1 pinch ground nutmeg
1 pinch cayenne pepper
4 boneless skinless chicken breasts (about 1 pound)
2 teaspoons margarine
1 ripe but firm mango, peeled and cut into chunks
2 green onions, thinly sliced
Salt, to taste
1/4 cup chopped fresh coriander
Juice from 1/2 lime
Mix all the spices (cumin through cayenne) together in a small dish. Sprinkle the spice mixture onto both sides of each chicken breast.
Place a large nonstick frying pan over medium-to-high heat, add the margarine, and melt. Place the chicken into the frying pan, and cook for 10-15 minutes or until the meat is fully cooked (no longer pink). While sautéing, turn the chicken intermittenly to ensure even cooking.
Next, add the mango and green onions to the frying pan. Cook for another minute.
Once fully cooked, remove the skillet from the heat and add the salt, coriander, and a splash of lime juice to the top of the chicken mixture. Serve immediately.
