3 cups low fat cottage cheese
1 cup mango nectar
1/2 cup sugar
2 tablespoons honey
2 tablespoons lemon juice
1 tablespoon finely chopped ginger
3/4 cup diced mango
Add the cottage cheese, mango nectar, sugar, honey, lemon juice, ginger, and mango to a blender or food processor and blend until smooth.
Add the mixture to an ice cream maker that is approximately 1 1/2 quarts or larger. Refer to the ice cream maker instructions for proper freezing technique.
If hard ice cream is desired, freeze approximately 2 to 3 hours prior to serving.
