1 pound sweet potatoes, peeled and cut into 2-inch pieces
2 medium carrots, thinly sliced
2 tablespoons maple syrup
Pinch of ground nutmeg
Freshly ground black pepper
In a medium saucepan, add the sweet potatoes, carrots, and one inch of water. Cover the saucepan and bring to a boil.
Reduce to medium heat and cook for 10 minutes. The sweet potatoes and carrots should be very tender.
Drain the water and mash until smooth in texture. Add the maple syrup, nutmeg, and pepper to taste. Stir until combined.
