1 pound turkey tenderloins, cut into strips
1 cup buttermilk
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
2 teaspoons and 1/2 cup mustard
1 teaspoon ground cumin
1 teaspoon dried thyme leaves
2 tablespoons canola oil
1 teaspoon salt
1/4 cup maple syrup
Preheat an oven to 450 degrees F.
In a large bowl, whisk together the buttermilk and 2 teaspoons of the mustard. Add the turkey tenderloins and coat with the sauce.
In another large bowl, combine the cornmeal, flour, cumin, salt, and thyme. Roll the turkey tenderloins in this mixture.
Grease a baking sheet and place it in the oven to preheat for 5 minutes. Remove and evenly distribute the turkey tenderloins on this preheated sheet, baking for another 10 minutes or until the bottoms are golden.
Rotate the turkey tenderloins and bake for another 10 minutes.
Meanwhile, in a small bowl, whisk together the maple syrup and the remaining 1/2 cup of mustard. Serve this sauce alongside the cooked turkey tenderloins.
