1 onion, chopped
1 teaspoon olive oil
1/2 pound beef, sliced
5 cups water
1/2 teaspoon paprika
Salt to taste
3 green plantains
In a large pot, cook onion in oil until translucent. Add the beef and cook until slightly browned on all sides.
Add five cups of water and bring to a boil. Cover and simmer over reduced heat for 30 minutes.
Add the paprika and stir into the mixture. Peel the plantains and chop if desired. Add the plantains to the soup and cook for 30 minutes.
Serve hot.
