1 1/2 pounds extra lean ground beef
3/4 cup Italian style bread crumbs
1 egg
1 teaspoon salt
1/5 teaspoon black pepper
Topping
1 cup tomato sauce
1/2 tablespoons mozzarella cheese
Filling
1 package 10oz spinach
1 1/2 cup mozzarella cheese
1 tablespoon Italian seasoning
1/4 tablespoon salt
1/3 tablespoon garlic powder
2 tablespoons olive oil
Set temperature of the oven to 375°F.
Add the ground beef, bread crumbs, egg, salt, and pepper to a bowl and mash together. Shape the meat into a 1/2 inch thick rectangle shape and place on wax paper.
For the filling, add the olive oil to a pan and heat to medium. Add the spinach and cook until it starts to wilt. Set aside and let cool
When the spinach has cooled, put it in a bowl and add the mozzarella cheese, Italian seasoning, salt, and garlic powder and mix.
Spread the filling evenly over the flattened meat. Roll the meat the long way until it is rolled up like a cylinder.
Place the meatloaf into a bread pan and bake for 1 hour.
During the last 5 minutes of baking, put the tomato sauce on top of the meatloaf and top it off with the mozzarella cheese.
After the meatloaf is cooked, let it cool for 5 minutes and then cut into slices.
