6 white fish fillets (6-8 ounces each)
6 slices tomato
6 slices red onion
6 rings green bell pepper
6 thin lemon slices
6 sprigs fresh rosemary
6 tablespoons butter
2 tablespoons lemon juice
2 tablespoons olive oil
1/4 teaspoon salt
Preheat an oven to 375°F.
Rip 6 equal-sized squares of aluminum foil and use half of the butter to grease them. Place one fillet of fish onto each buttered foil.
Mix the lemon juice, oil, and salt in a small bowl and pour 2 teaspoons of this mixture over each fillet. Place 1 slice each of onion, bell pepper, tomato, lemon, and a sprig of rosemary onto each fillet. Spread small pieces of the remaining butter between the six fillets.
To make a packet, fold the top of the foil over the fish and fold the edges over to seal. Add the packets to a baking sheet. Bake the fish for 10-15 minutes. The fish are done when they flake with a fork and are opaque.
