1 pound pecans
1 tablespoon packed dark brown sugar
1 1/2 teaspoons kosher salt
1 teaspoon fresh thyme, chopped,
1 teaspoon fresh rosemary, chopped
1/2 teaspoon freshly ground black pepper
Pinch of cayenne pepper
2 tablespoons extra-virgin olive oil
Preheat the oven to 350°F.
Place the pecans on a large baking sheet, spreading into an even layer. Bake in the oven for 12 minutes or until fragrant, taking care not to burn.
In a large bowl, mix all the remaining ingredients except for the olive oil. Add the pecans to a second large bowl, top with oil, and toss until well-coated. Add the spice mixture to the pecan bowl, and toss again. Serve warm or at room temperature. Store in an airtight container.
