2 and 1/2 medium sized bananas
1 large egg
1/2 cup applesauce
1 tablespoon stevia or 1/2 cup artificial sweetener
1 cup whole wheat flour
1 cup regular flour
1/4 cup milk, 1%
1/4 teaspoon vanilla extract
2 teaspoon baking powder
3 tablespoon semi-sweet mini chocolate chips
Preheat the oven to 350°F.
Unpeel the bananas and place them in a large mixing bowl. With a fork or potato masher, mash the bananas.
Add the egg, applesauce, baking powder, milk, vanilla extract, and stevia to the mashed bananas, and stir to combine.
Gradually add and stir in both types of flour to the mixture. Then add the chocolate chips.
Fill 16 muffin tins with the batter using a spoon or ice cream scoop.
Place the muffins in to the oven and bake for 20 minutes. Allow the muffins to cool before serving.
