1 cup oats
2 very ripe bananas, mashed
1 cup walnuts, chopped
1 cup skim milk
1 cup whole-wheat flour
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 packet artificial sweetener
Soak oats in milk for one hour. Meanwhile, preheat oven to 400 degrees Fahrenheit and coat a muffin pan with cooking spray.
Combine soaked oats, bananas, egg, and vanilla extract in one bowl. In another bowl, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and sweetener.
Slowly add the wet ingredients to the dry ingredients, mixing well. Add walnuts. Spoon mixture into muffin pan.
Bake 20 minutes or until a toothpick inserted in muffin center comes out clean.
