1/2 cup sugar (preferably light brown)
1/2 teaspoon vanilla
1/2 cup whole-wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup dried dates, finely chopped
1 cup nuts, chopped
Beat the eggs and then mix in the sugar and vanilla. Blend the dry ingredients together, sift into the egg mixture, and then add the dates and nuts.
Grease a 9 x 9 inch pan and spread the mixture into it. Bake for 25-30 minutes at 350°F. While still warm, remove from the pan and cut into small squares.
