4 salmon fillets (3-ounce each)
1 tablespoon Dijon mustard
1/4 cup bread crumbs
1 ounce pistachios, shelled
1 clove garlic, minced
1 shallot, minced
Nonstick cooking spray
Salt, to taste
Ground black pepper, to taste
Preheat the oven to 425°F.
Chop the pistachios in a food processor or with a knife until they are the size of breadcrumbs.
Mix the chopped pistachios with the breadcrumbs, garlic, and shallots in a large bowl. When combined, place the mixture on a deep plate.
Sprinkle the desired amount of salt and pepper onto the salmon fillets.
Evenly spread mustard on one side of the salmon. Coat that same side with the pistachio mixture.
Spray a baking sheet with the cooking spray and place the salmon on it.
Bake the fish for about 10 minutes, or until the fish is completely cooked. Serve immediately.
